The Restaurant 7 Sillas is not only the place to taste the famous Easter white lemonade, the broth skewer of mussels or the reference in that song of the singer-songwriter Pavlenha from Ponferrada, in the province of Bierzo. It is much more. It is the continuation of a story that began in 1918 with the mythical Hotel Lisboa, a place that left its mark in Ponferrada and in all those who crossed its doors.
Just a few steps from where 7 Sillas stands today, the Hotel Lisboa opened thanks to the vision of a man with Galician roots, nicknamed “Carburo”, known for his jewelry store illuminated by carbide lamps in the Plaza de la Encina. But his great work was the Lisboa, which was not only a hotel, but the epicenter of social life in Ponferrada. Travelers, the great figures of the main theater, commercial representatives and even doctors attending their patients in the rooms passed through its halls. And for tourists, they were picked up at the train station with a horse-drawn carriage, which made it the “Tourist’s preferred option”.
But if there is one thing that made the Lisboa famous, besides its homey hospitality, it was its cuisine. From homemade family recipes to the haute cuisine touches of a chef trained at the Ritz in Madrid, his dishes blended tradition and sophistication.
The lacón con grelos became an emblem, so much so that even the famous chef Chicote could not resist taking a portion with him to Madrid.Of course, the founding grandfather of the hotel had his rules: no comedians, no bullfighters, no people of “bad life”. Only the stars of the Teatro Principal, soccer players of the Orense soccer team -because the land is a pull – and clients with good manners were allowed.
Hotel Lisboa closed in the 1990s, but its history did not end there. Today, in the 7 Sillas, its spirit is still alive in every dish, in every corner, in every story that is told around a table. Come and taste a piece of history, because in Ponferrada, tradition is not forgotten: it is savored.
